The main duties and responsibilities of this role include:
- Own the performance of every seat across the portfolio, ensuring demand is intelligently converted into occupancy, revenue and high-quality guest flow
- Transform reservation systems into precision commercial tools, actively shaping access, pacing and availability to maximise both utilisation and guest experience
- Read the rhythm of demand across outlets, anticipating gaps and working closely with restaurant teams to unlock opportunity in real time
- Curate booking strategies that balance commercial ambition with operational flow, protecting both revenue integrity and guest satisfaction
- Ensure that every touchpoint of demand — from campaigns to client relationships — is translated into confirmed, valuable reservations
