Position Summary
The Pizzaiolo focuses entirely on the art of crafting authentic pizzas. This role is dedicated strictly to dough handling, ingredient preparation, and oven operations. You will spend your shifts hand-stretching dough, assembling fresh toppings, and baking pizzas to perfection.
Dough Handling & Preparation
- Dough Portioning : Roll, weigh, and ball pre-made dough batches into precise portions for proofing.
- Mise en Place : Slice, grate, and prep pizza toppings, cheeses, and sauces for the pizza station.
- Station Setup : Organize the pizza line with fresh ingredients before each service rush begins.
Assembly & Baking
- Hand-Stretching : Stretch pizza dough by hand to a uniform thickness, avoiding rollers or presses to protect the crust texture.
